{Baking} Dutch mini pancake puffs aka Poffertjes
Poffertjes: Quick and easy to make snack on a rainy day…
Poffertjes are traditional Dutch batter treat, resembling small, fluffy pancakes.
Ingredients:
250 gr all purpose flour
1 t instant yeast
50 gr sugar
3 egg yolks
375 ml milk, room temperature
1/2 t vanilla, 1/2 t baking powder, 1/4 t salt
50 gr butter / margarine, melted
Toppings & Fillings:
chocolate chips, cheese { optional }
Butter / margarine
Powder sugar
Kitchen equpiment:
Bowls
Whisk

Directions:
Mix flour, yeast and sugar.
Whisk egg yolks and milk together. Pour onto the flour mix. Whisk until you’ve reach a smooth batter.
Cover the bowl with a clean damp kitchen towel and let it rest for 30-60 minutes.
Add the rest of ingredients. Mix well.
Heat poffertjes pan on medium heat and lightly butter each dimple
Pour a small amount of batter in each dimple. { since I don’t have a Poffertjes pan, I use mini pancake pan instead }
Flip the Poffertjes after about one minute, or until golden brown.
Brush some butter / margarine and sprinkle some powder sugar.
Serve warm.
Repeat with remaining batter, grease pan between additions.
If you have one Poffertjes pan and want to make a ball like Poffertjes, here is the trick:
After you pour a small of batter in each dimple, wait till the sides dry up a bit. Take out from the pan and put aside.
Repeat the first step, but when you see the skin started to form, add filling if you like { such as cheese, chocolate, etc }.
Then put the first half round Poffertjes you make earlier on top of the second one.
Rotate with skewer. Cook till golden brown.
