{Indonesian Cupcakes}: Putu Ayu
Putu Ayu is Indonesian steamed cupcake. I rarely eat this when I was in Indonesia. but when I am away I seem to miss all the traditional food, snack and dessert.
It is somewhat easy to make and if you follow the recipe, you won’t fail {I promise}.
The original recipe calls for grated coconut but I omit it coz. my daughter doesn’t like it.
Here’s how Putu Ayu should looks like (left) and the mold (right).
Anyway, here’s my recipe that I copied from this site. I stick with this recipe coz. I love the texture and the sponginess of the cupcakes.
Ingredients:
150 gr grated coconut
5 eggs
200 gr sugar
200 gr flour
150 ml coconut milk
1/2 teaspoon salt
Pandan paste
cooking oil to grease the molds
Directions:
Prepare steamer.
Grease 18 molds with cooking oil.
Beat eggs and sugar using electric mixer on high speed until pale and creamy.
Add flour and mix with spatula.
Pour in coconut milk, salt and Pandan paste. Stir to combine.
Put 2-3 tbsp of grated coconut into each mold, press firmly into base.
Fill the molds with batter until full.
Steam about 15 minutes or so until a skewer inserted into the center comes out clean.
When the cakes are cooked, leave to stand for 5 minutes. Run a knife around the edge of each mold, then ease the cake out onto a serving plate.
Note: if you are using a frozen grated coconut, I suggest to re-grate the coconut with chopper.

Hi Marlene….a friend of mine give the molds to me. If you like the half egg shape, you can buy the molds at Michaels or Jo Ann. Good luck!
